La Grande Récolte represents the quintessence of the Paillards vineyards. Crafted by blending only the first press of old vine Chardonnay and Pinot Noir, the 2006 release offers an intense and complex expression of the Terroir of Bouzy. The 2006 release was vinified in stainless steel using only the first press and heart of the cuvées. After the alcoholic and malolactic fermentations, the wine was kept on its lees for eight months until bottling.
Aged in our 19th century cellars, at a depth of 16 meters and a constant 10°C temperature (50 °F). The combined effect of a second slow fermentation (2 months) and a 9-year ageing on their lees bring out the desired balance and texture.
Visually, this wine is a vivid, yellow gold. Ripe, red berry fruit, blood orange and quince jump from the glass. Orange zest, red currant and the Bouzy trademark of chalky minerality follows in the finish. The wine closes with spice, toasty lees and excellent clarity and length.
Lobster, fresh or slightly fried foie gras, fish, either grilled or with a sauce, scallops, roasted lamb, Parmigiano or Comté cheese.
