Les Maillerettes is a single vineyard, single cepage (Pinot Noir), single vintage champagne. It has been crafted every year since 2007. The old vine Pinot Noir from this vineyard is used for our sélection massale, a process that allows us to propagate this exceptionable vine and preserve our vinous identity. Lieu-dit: Les Maillerettes - 0,8-acre plot planted in 1970 Grape variety: 100% Pinot Noir Vintage: 2010 Production: 2500 bottles - 210 cases Dosage: 2.6 grams per liter (Extra-Brut) Soil: Pure chalk lies only 50 centimeters (16in) below the clay topsoil. The roots are quick to penetrate this chalk crafting fruit that gives our wine both tension and texture.
The 2010 release was vinified in stainless steel using only the first press and the heart of the cuvée. After alcoholic and malolactic fermentations, the wine was kept on its lees for eight months until bottled.
The champagne is aged in our 19th century cellars at a depth of 53 feet/16 meters and at a constant 50°F/10°C temperature. The combination of a second slow fermentation (2 months) and 5 years of sur lie ageing crafts a wine of balance and finesse.
This classic Blanc de Noirs is a true expression of the complex Bouzy terroir made manifest. The bouquet harmoniously transitions from aromas of fresh grapes to those of stone fruits. Full-bodied and round, the wine hints of sweet cherry on the palate, then finishes with a high tensile strength minerality that is almost saline. The wine is a tantalizing combination of elegance, fruit and power.
