We have been working on new wines for 3 years. This requires experimentation and new winemaking practices. The use of Barrels is one of them.
Wine will spend its first 3 months into the barrel. A short period of time in which the wine starts its life. Barrels help give a different texture to the wine. They open the door to the taste.
Barrels that enter into the winemaking process are previously used barrels. Woody taste is so light that it is virtually neutral. Only the fruit is enhanced.
For these reasons, we ask our good friends Elsa and Adèle Matrot from Domaine Matrot in Meursault, Burgundy to provide us with previously used barrel, the one that are used to create some of the best white wine in the world...
