Terroir of Bouzy

Our family domain, a historic 11-hectare vineyard, is located in the Grand Cru terroir of Bouzy. Nestled on the southern slopes of the Montagne de Reims, this village and the neighbouring Ambonnay are renowned for producing some of the region’s most intense, deep and exceptional Pinot Noir wines.

Les Parcelles XIX

Bouzy Grand Cru

Les Parcelles is a precise expression of Bouzy terroir vinified by the Paillard brothers; the powerful Pinot Noir from south-facing slopes is balanced by the finesse of the chalky subsoil.

Made mainly from the 2019 vintage using 20% of reserve wine, this cuvée is 80% Pinot Noir and 20% Chardonnay.

Fermented in oak, it is cellared for three years on lees before disgorgement.

Dosage: 2 gr/l.

Les Parcelles XX

Bouzy Grand Cru

Les Parcelles is a precise expression of Bouzy terroir vinified by the Paillard brothers; the powerful Pinot Noir from south-facing slopes is balanced by the finesse of the chalky subsoil.

Produced mainly from the 2020 harvest, with 20% reserve wines, this cuvée is composed of 80% pinot noir and 20% chardonnay.

Fermented in oak, it is cellared for three years on lees before disgorgement.

Dosage: 2 gr/l.

Les Terres Roses XIX

Bouzy Grand Cru

This rosé champagne is defined by Pinot Noir notes, that leave a delicate structure with firmness and fresh character.

Made primarily from the 2019 vintage, this cuvée is 70% Chardonnay and 30% Pinot Noir, of which 5% is Bouzy Rouge, a still red wine made from old vine Pinot Noir.

Fermented in oak, it is cellared for three years on lees before disgorgement.

Dosage: 2 gr/l.

Bouzy Grand Cru

This rosé champagne is defined by Pinot Noir which gives a delicate structure with firmness and a fresh character.

Made primarily from the 2019 vintage, this cuvée is 70% Chardonnay and 30% Pinot Noir, of which 5% is Bouzy Rouge, a still red wine made from old vine Pinot Noir.

Fermented in oak, it is cellared for three years on lees before disgorgement.

Dosage: 2 gr/l.

La Grande Récolte 2012

Bouzy Grand Cru

La Grande Récolte 2012 is the most perfect illustration of Maison Pierre Paillard. A blend of old vine Pinot Noir and Chardonnay, 2012.

2012 was a great vintage which shows both complexity and definition. Harvest began on September 21st.

This wine was aged on lees for ten years before disgorgement.

Dosage: 1 gr/l.

Les Maillerettes 2019

Bouzy Grand Cru

Les Maillerettes is a single vineyard champagne made from fifty year old massal selection Pinot Noir vines.

The Pinot Noir from the historic family parcel gives a finely crafted, precise, refined cuvée.

Les Maillerettes is aged in oak, bottled under cork for the second fermentation and spent four years on lees before disgorgement.

Dosage: 3 gr/l.

Les Mottelettes 2019

Bouzy Grand Cru

Les Mottelettes is a single vineyard champagne made from massal selection, old vine Chardonnay planted in 1961. It is a full-bodied, rich expression of Chardonnay with citrus and white fruit notes.

Les Mottelettes was aged in oak, bottled under cork for the second fermentation and spent four years on lees before disgorgement.

Dosage: 3 gr/l.

« Chardonnay can thrive in Bouzy too, making wines of great personality, although in general it prefers vintages without excessive heat. Old vines, such as those planted in 1961 in Les Mottelettes, can produce mouthfilling, vividly chalk-driven wines, while offering an entirely different expression than the chardonnays of the Côte des Blancs. » Peter Liem
